My defining moment at Trinity
When I was at Cambridge Regional College doing Level 2 Professional Cookery, CRC opened its new building at King’s Hedges. Local businesses got involved with the launch and Trinity offered to collaborate on the desserts. I was picked to do the sweet. I came to Trinity and worked with pastry chefs Pete and Malc – we made Trinity Burnt Cream for the new building opening. Then I was invited to work weekends here while doing my apprenticeship. So if it was not for crème brulee I probably would not be working here.
